Baked Udon

I wanted to cook pasta today, but then I realized that I didn't have any pasta. Instead, I found udon. So I decided to experiment a bit, and discover this nice easy recipe, a fusion between japanese and italian cooking. It is very easy and quick to cook. Try it for yourself!

Baked Udon


  • One package of dry udon (you can buy in Daiso)
  • Filling: Spinach, Shitake mushroom, Tofu, Tuna fillet, or anything else that you want, chopped
  • One onion, chopped
  • One egg, well-beaten
  • Four tablespoon of Miso paste, or to taste
  • 50ml Mirin, or to taste (can be replaced by dissolving sugar in rice vinegar if you wanna go non-alcoholic)
  • A few tablespoon Sake (can be omitted if you abstain from alcohol)
  • Mozzarella cheese
  • Salt and pepper, to taste

Cook dry udon in boiling water until al dente, then strain and put it under running cold water until udon is no longer hot. Meanwhile, mix onion, spinach egg, Miso, Mirin, Sake, salt and pepper in a bowl until well mixed. Then mix in udon, and mozarella cheese, mix well. Bake in medium heat in oven for 20 minutes, or for my case, in microwave for 20 minutes, medium-low power. This will serve 3-4 people, and good as Entree. Enjoy!
